Highland cattle are a heritage breed originating in the Western Isles of Scotland. They are known for their hardy nature due to their thick, shaggy coat and ability to browse for food in steep mountain areas.
Similarly, our herd is well adapted to their environment on Pine Coulee where the wind blows the snow off the hilltops in the winter. Unlike other breeds, our highland herd graze the high hilltops and eat brush and plants other cattle avoid.
The Queen of England has a herd of Highland cattle at Balmoral Castle to keep the royal family supplied with the best beef. Highland stands out most for its flavour. It's lean, and has a much more bold, beefy flavour than what you would get at the grocery store.
